The staff follows all the phases of oil production: from the cleaning of the soil, to pruning, to fertilizing, to treating diseases and harvesting (which is always done when the olives begin to turn brown). After being transported to the oil mill, which always takes place within twelve hours of collection, Ms. Pia also personally attends to the pressing and packaging of the precious extra virgin olive oil that comes out of machinery whose temperature does not exceed the graduation that is called "cold crushing" , all according to the rigorous organic dictates.
The Mandorlaie are designed to be organic in all, the remaining part of the company, in fact, has a 19 kw photovoltaic system and one of solar panels for heating the house, which are also available, in addition to its four donkeys amiatine, of dogs, cats, rabbits, chickens, ducks and mallards who enjoy themselves in a small pond that also collects meteoric waters.
